1 onion, diced 2 Tbsp olive oil 2 cloves garlic, crushed 400g mushrooms, finely chopped freshly ground black pepper to taste 200ml jar Mexican taco sauce 150g tasty cheddar cheese, grated 4 large flour tortillas Preheat the grill. Saute´ the onion in the oil in a large non-stick frying pan until soft. Add the garlic, mushrooms and black pepper. Cook until the mushrooms are tender. Add 3/4 of the taco sauce and 3/4 of the cheese. Heat through slightly. Divide evenly between the tortillas and roll up. Place in an oiled baking dish. Cover and microwave on half (50%) power for about 4 minutes or until heated through. Top with the remaining taco sauce and the cheese. Place under the grill to brown. — Serves 4
