ONE-PAN PILAF WITH SHRIMP

1 onion, diced 1 each: red capsicum, chilli, seeded and diced 2 Tbsp canola oil 1 cup fish stock 2 x 250g packets long-grain 90-second white rice 1 cup frozen peas, slightly thawed 2 cups shelled cooked shrimp 4 tablespoons chopped fresh herbs Stir-fry the onion, capsicum and chilli in the oil for 1 minute. Add the stock and rice. Stir well, bring to the boil and simmer gently for 2 minutes. Add the peas and shrimp. Simmer for another 3-4 minutes. Sprinkle with the herbs. — Serves 4
